Born in Uzbekistan in 1962 as Stanislav Huseynovich Khankishiev, he built a following first through photography and writing, then through Russian television, where his demonstrations carried the plainspoken authority of someone who'd grown up around the real thing. Central Asian cuisine was his anchor - the region's techniques and ingredients decoded for a post-Soviet audience - but he widened the lens to include dishes from the Caucasus, the Balkans, and Slavic kitchens. The screen and the cookbook turned him into a recognizable figure across the Russian Federation, a guide to foodways that had lived in home kitchens but rarely in the spotlight.
